Let’s cook a very typical Greek dish : lentil soup

Lentil soup

In Greece we cook at least once per week pulses. Lentils are one of the most popular and we usually prepare them as a soup. It is an easy, tasty and rather fast dish.  And important as well, also very healthy.


If you have never made lentil soup before, here is a typical Greek recipe:

Ingredients

½ kg lentils
1 medium onion, chopped
2 cloves garlic
½ teacup olive oil
1-2 bay leaves
1 tablespoon tomato paste
Salt, pepper
vinegar

Method

Clean and wash the lentils. Drain them afterwards.  Pour 6 teacups of water in a pot; add the lentils, the chopped onion, the garlic, the tomato paste and the bay leaves. Let the mixture cook gently for about ½ hour. Add the oil, the salt, pepper and a bit of vinegar. Cook the soup for another 15 minutes until it has thickened a little. Serve the soup in plates and drizzle some vinegar on top.

This dish is very tasty combined with pickles, olives and feta cheese!
